Raw material formula:
Chaozhou rice flour 16 kg, white sugar 5 kg, Osmanthus fragrans 250 g
Production Method:
1, cake powder. The white glutinous rice should be scouring with water, removing impurities, and putting it in the cylinder for water soaking for one week (the water needs to be changed once a day), and then remove it and pour it with clear water. After slightly drying, grind it into fine powder. Combine 16 kg of flour powder and 2 kg of white sugar (or sugar powder) together to make a cake powder.
2, cake core. Take 3 kg of white sugar and sweet-scented osmanthus.
3, cake blanks. First use a square (50 cm wide) holed wooden board, put a bamboo curtain, and then add a layer of cake cloth (white cloth). And put a wooden frame around the board (about 13 cm). After the above preparations are made, the iron powder sieve (16 eyes) can be used to evenly sieve the cake powder into the wooden frame. When the cake powder is near the half wooden frame, the cake core is evenly sieved in, and then the remaining powder is sieved into the wooden frame. Full, flattened, cut into rectangular pieces with a knife, remove the active wooden frame, and become a cake blank.
4, steamed cake. After the cake blank is made, the plate is put into a grid, and each plate is loaded with about 5 plates. The plate is steamed for about 10 minutes and cooked.
Finally, use a knife to draw into small rectangular pieces.
